These are one of my favourite quick dinner staples: black bean meatless balls with yummy but subtle seasoning and a perfect texture. Including some spinach means you should have a complete protein— legume + whole grain (oats) + dark green veggie! I love to serve these with some guacamole, or even just a slice or two of avocado.
Ingredients
- 1 can black beans, drained and rinsed, or about 1 1/3 cups cooked black beans
- 1 egg
- 1 clove garlic, chopped
- 1/2 cup onion (I like red onion for the added colour), finely chopped
- A handful of spinach
- 1/3 cup old-fashioned rolled oats (ie: not quick oats)
- 1/2 tsp salt
- 3/4 tsp chilli powder
- 1/2 tsp turmeric
Instructions
- Preheat your oven to 350F.
- In a food processor or using a handheld blender, puree the beans, egg, and garlic until mixture is smooth and consistent.
- In a small separate bowl, mix together the oats, salt, spinach, chilli powder, and turmeric.
- Add all of these ingredients to the pureed bean mixture and mix well.
- Form into 1.5 inch balls and place on an oiled baking sheet. You should be able to make about 12.
- Bake for 25 minutes, or until lightly browned and firm.

As always, you can play with the spices depending on how you’re feeling (although I do like this subtle chilli flavour a lot). Also note that this is a gluten-free recipe as long as you use gluten-free oats!
