Black Bean Meatlessballs

These are one of my favourite quick dinner staples: black bean meatless balls with yummy but subtle seasoning and a perfect texture. Including some spinach means you should have a complete protein— legume + whole grain (oats) + dark green veggie! I love to serve these with some guacamole, or even just a slice or two of avocado.

Black bean meatless balls

Ingredients

  • 1 can black beans, drained and rinsed, or about 1 1/3 cups cooked black beans
  • 1 egg
  • 1 clove garlic, chopped
  • 1/2 cup onion (I like red onion for the added colour), finely chopped
  • A handful of spinach
  • 1/3 cup old-fashioned rolled oats (ie: not quick oats)
  • 1/2 tsp salt
  • 3/4 tsp chilli powder
  • 1/2 tsp turmeric

Instructions

  1. Preheat your oven to 350F.
  2. In a food processor or using a handheld blender, puree the beans, egg, and garlic until mixture is smooth and consistent.
  3. In a small separate bowl, mix together the oats, salt, spinach, chilli powder, and turmeric.
  4. Add all of these ingredients to the pureed bean mixture and mix well.
  5. Form into 1.5 inch balls and place on an oiled baking sheet. You should be able to make about 12.
  6. Bake for 25 minutes, or until lightly browned and firm.

As always, you can play with the spices depending on how you’re feeling (although I do like this subtle chilli flavour a lot). Also note that this is a gluten-free recipe as long as you use gluten-free oats!
